When I was cutting up a pumpkin today I was about to throw away the seeds when I remembered an image I saw for roasted pumpkin seeds a few months ago (it was probably during Halloween). So...I gathered the seeds, gave them a wash, popped them on some baking paper with sea salt and chilli flakes and roasted them in the oven for about 15mins on 180 degrees.
OMG, I seriously could not believe how tasty they were, crunchy, salty goodness! Only problem is you'll want to go out and buy another pumpkin just so you can make some more. The kiddies loved them to. Result!
