Pineapple and coconut are a match made in tropical heaven, so let's round off the week with a round!
1/2 cup of shredded coconut (toast it lightly in the oven)
1/4 freshly squeezed orange juice
1/4 cup of coconut rum
1 1/4 ounce of dark rum
1/2 cup pureed pineapple (from the hollowed out pineapple)
Shake it all up in a mixer with some ice. Pour out into your pineapple and pat the toasted coconut onto the rim and pop a little sprinkle in.
Add whatever cocktail umbrella, straw, fruit on a stick, flowery stuff you have and post an enviable pic to Instagram.
Now drink up!
